FOODIES || my menudo

Pinoy Menudo without tomato sauce. I don't really like tomatoes and liver, and I rarely eat capsicum so this is just perfect for me :) I first tried making this recipe with beef, but pork fared a lot better.


Preparation Time: 20mins
Cooking Time: 50mins


Ingredients:
approx 1 kg pork belly (I used cubed pork belly and sliced them into 4 lengthwise)
1 can of liver spread (liver substitute)
3 small potatoes (sliced lengthwise)
2 carrots (sliced lengthwise) 
8 hotdogs (sliced lengthwise)
1 red capsicum/bell pepper (diced)
frozen peas (not a big fan of peas so I added just enough to decorate)
1 onion (minced)
6 cloves of garlic (minced)
3 tbsp soy sauce
1 tbsp lemon juice
4 cups of water
salt and pepper
canola oil
2 bay leaves


1. Marinate pork in soy sauce and lemon, do this before you slice up the rest of the ingredients.
2. In medium heat, saute onions in oil until translucent, add garlic and saute for another minute before adding capsicum.
3. When capsicum is tender, add pork and turn up the heat a little higher, stir until oil from pork comes out. 
4. Reduce the heat again to medium and add carrots and water. Cover and simmer for 10 mins.
5. Add potatoes, hotdogs, liver spread and bay leaves. Simmer for another 15 mins.
6. Add the peas, salt and pepper to taste. Stir for 2 more mins.
7. Serve hot with steamed rice :D
